INGREDIENTS
2 bunches of romaine lettuce
2 to 3 cloves garlic
1/2 cup extra virgin olive oil
1 egg yolk
1/2 cup croutons
3/4 cup fresh parmesan cheese (grated)
1/4 t. salt
1/2 t. pepper
2 t worchestershire sauce
2 to 3 dashes red wine vinegar
3/4 T grey poupon mustard
1 can flat anchovies (chopped)
1/2 medium size lemon |
PREPARATION
Place a medium size towel into a large salad bowl (preferably wooden). rinse romaine lettuce and break up into 3 inch pieces. Place these pieces into the salad bowl. After this had been done wrap the towel around the romaine and tie a knot. Place in re- frigerator to chill till it is ready to be mixed with the rest of the ingredients. Mash the garlic cloves into the salad bowl and add the olive oil. Next, add the rest of the ingredients, saving the cheese and croutons to be mixed with the romaine. note: be sure to mix well as you go along. If you like it a little spicy try adding a dash or two of tabasco. also add fresh ground pepper.
