INGREDIENTS
1/4 cup sliced almonds
1 tbsp + 1tsp sugar
1/4 head lettuce, torn into bite size pieces
1/4 bunch romain
2 medium stalk celery, chopped
2 green onions, sliced
1 can 11-oz mandarin oranges, drained
Dressing
1/4 cup oil
2 tbsp sugar
2 tbsp vinegar
1 tbsp snipped parsley (or cilantro)
1/2 tsp salt
Dash red pepper |
PREPARATION
Dressing
Combine dressing ingredients.
Salad
Cook almonds and sugar over low heat stirring constantly until sugar is melted and almonds are coated; cool and break. Place lettuce and romaine in plastic bag; add celery and onion. Shake and store in refrig.
When ready, pour dressing on, add oranges, almonds and serve. |
